Blueberry Cheesecake
Ingredients
1 ½ cups of sugar
2 cups of cottage cheese
6 tbsp of flour (all purpose)
4 eggs (beaten)
A couple of 8 ounce packs of cream cheese
2 tbsp of lemon juice
1 cup of butter
1 tsp of vanilla extract
2 cups of sour cream
6 tbsp of cornstarch
For the blubbery glaze, you’ll need the following:
A cup of sugar
1 cup of water
2 cups of blueberries
2 tbsp of cornstarch
For the crumb crust:
2 cups of cracker crumbs
¼ cup of butter (melted)
2 tsp of sugar
Instructions
Begin this cheesecake recipe by putting the cream and cottage cheese in a mixing bowl. Beat it until they turn smooth. Add the sugar and beat it thoroughly.
Add the eggs one at a time. Beat each egg prior to adding the next one. Throw in the vanilla, flour, lemon juice and cornstarch. Beat the mixture and then add the sour cream and butter.
Pour the crust ingredients into a 10 inch pan. Toss the creamy mix on top of this. Put the pan on the rack’s bottom. Make sure there’s an inch of hot water there.
Bake this tasty cheesecake recipe for 70 minutes at 325 degrees. Turn off the oven. Leave the cheesecake in the oven. Let it cool there for two hours. Put it in the fridge to cool down. Get a saucepan and mix the cornstarch with the sugar.

Coconut Cheesecake
Ingredients
1/3 cup of sugar
24 ounces of cream cheese
2 tbsp of butter
1/3 cup of almonds
2 cups of flaked coconut
1 tsp of vanilla extract
A cup of assorted fruits (for this cheesecake recipe you can use bananas, apple, oranges etc)
4 eggs (large)
½ cup of coconut
1/3 cup of melted choco bars
10 ounces of pineapple (crushed)
1/3 cup of all purpose flour
1/3 cup of apricot
Instructions
Preheat the oven to 350 degrees. Put the almonds, coconut and butter in a bowl. Mix it. Put the mix in a springform pan (9 inch). Bake it until the cake turns gold. Allow it to cool for a few minutes. Get a bowl with an electric mixer.
Add the sugar, flour, fruit bits and vanilla. Beat it until it gets fluffy. Add the apricot and coconut. Beat it again. Add the eggs one at a time, beating it well.
Toss in the pineapple and stir it. Pour this into the crust and bake for 60 minutes. Allow it to cool on the rack.
